There is nothing better than eating the fresh produce of high summer as simply and deliciously as possible. Having just got home from our 10-day honeymoon trip and having only a fresh veggie delivery and what staples were in my house, I threw together this delicious summer vegetable salad – try my recipe, or get creative and make your own!
What I had from my veggie delivery bag:
2 tomatoes
fresh green beans
What I had in my fridge/pantry:
Parmesan cheese
a teeny bit of rotini pasta
salt & pepper
garlic
olive oil
What the Monkey had growing on the balcony:
A few reject tomatoes with splits and/or blossom end rot, but at least half red and promising
A generous handful of Sungold and yellow pear grape tomatoes
Basil
Red sweet peppers
What I did with it all:
Lightly steamed/sauteed the green beans (snapped them into bite-sized pieces) in water, olive oil and salt; chopped all the tomatoes and one sweet pepper; boiled the rotini; julienned the basil. I cooled the beans and pasta and added it to a bowl fill of the chopped tomatoes, pepper, and basil. Salted and peppered to taste, and topped with generous grated Parmesan cheese. Simply delicious. It’s my side to easy baked tilapia filets.

Step 2: Get your ho to toss them together into a salad of some sort.
Step 3: Profit!
okok…you know I love your cooking, especially when we come home from our honeymoon and the weather (lots of high winds that messed up my tomatoes) has caused my garden to go to shit. I’m rehabbing Walls Sky Farms as we speak, and hopefully we’ll have happy tomato stories to tell in a week or two.
This looks so good! I like the idea of using whatever you have on hand in a creative way (especially since this salad includes basil, tomatoes, cheese, and pasta – that’s a great combo!).
The salad I’m obsessed with is greens with a sliced peach, cheddar cheese, and chickpeas, topped with some balsamic vinegar, olive oil, kosher salt, and pepper. It’s a good mix of salty and sweet.
Your peach and chickpea salad sounds delicious too!
I was happiest with the green beans in my salad – being just barely sauteed, they added a crisp the to the softness of the other ingredients, in addition to the balance of colors.
